I nearly died from anaphylactic shock after ingesting a small piece of a tree nut. Later my daughter was diagnosed with Celiac Disease and needed to be placed on a gluten-free diet.

These situations led me to create new gluten-free recipes and/or adapt my favorite wheat recipes and create a cookbook for people with food allergies and other disorders that require the elimination of common foods/ingredients from one's diet.

I have literally spent countless hours in the kitchen, pondering over recipes, creating new recipes, and doing research on food allergies and sensitivities. Due to stomach and intestinal problems, I have been gluten free now for a few months.

When I was diagnosed with a gluten sensitivity, I was so upset because I've eaten pasta, breads, cakes and other wheat products my whole life.

I tried store bought, gluten free bread and I was so disappointed in the taste and texture. I turned to rice cakes and corn cakes in place of bread.

When I tried the Flatbread recipe from The Sensitive Chef Cookbook, it not only tasted delicious but I could use it and enjoy it just as I would "normal" bread. It stays soft, freezes well and makes the best sandwiches.

Among my favorite recipes from this cookbook is the Pantry Surprise, which is so easy to prepare and I can add extra ingredients to fit our taste. It makes a great side dish or a main dish. Also, the Applesauce Breakfast Cake is Mmm, Mmm, Mmmm. This wonderful recipe can be used as a breakfast, a dessert or a pick-me-up snack. This is one cake that I'm okay with going back for seconds! It is so moist and has a great texture...good enough for me to forget it's gluten free.

My husband does not have a gluten sensitivity but he loves the recipes in this book. I've tried so many of the recipes and they are all delicious.

These recipes have given me motivation and all sorts of ideas to further my enjoyment of following and living on a gluten free diet. I tell everyone to try the recipes in this cookbook. The food is SO good!

For almost every recipe, substitutions and/or variations can be made in order to fit the sensitive individual's dietary needs. The cookbook is great because it list the different kinds of substitutions which can be made. For example, in place of cow's milk, a sensitive individual may substitute rice milk or soy milk. Those sensitive to eggs may use their egg substitute in some recipes.

I realize from personal experience that it can be a real challenge to develop dishes that can fool wheat-lovers, but I have been successful in doing just that with many of these recipes. My Double Delight Chocolate Cake was such a hit at a gathering, there was none left for my family to bring home to enjoy later!

My family and I have tried so many of the recipes in this wonderful cookbook!

I have tried gluten free box cake, cookie, pancake mixes. I have not been happy with any of them and my family will not eat them. The store bought mixes fall apart, are dry and grainy feeling and they must be eaten on the day they are made.

Using the Sensitive Chef recipes, making up the dry ingredients in advance has been a time saver. All the finished products are great the next day, too. And they do well from the freezer!

I was thirteen years old when I was diagnosed with Celiac Disease. I had to accept that I could never go out with my friends for pizza and I would have to read food labels for the rest of my life.

I was amazed the first time I tried a recipe from The Sensitive Chef Cookbook. In fact, I cried because I was so hungry and the food actually tasted really good.
